At a local ice cream shop recently I saw a menu item that read "Brownie Ice Cream Pizza." It got me thinking ... and thinking... (and maybe dreaming a little!)
It definitely sounded like a perfect dessert for Memorial Day, so I came up with my own version. I love the idea of chocolate and peanut butter; in fact, I have posted about the combination several times.
And here is my final product:
I started with a box of turtle brownies, and baked the batter in a spring form pan.
After it was cool, I added the ice cream ~ delicious cookie dough and chocolate chips (:
In the freezer it went.
On top of brownies I spread a chocolate sauce that hardened on contact:
1/2 bag of semi sweet chocolate chips, 1 tablespoon butter, 2 tablespoons vegetable oil. Melt.
Now the topping ~
I roughly chopped miniature peanut butter cups, and I left some whole.
These were added quickly to the top of the cake before the chocolate had time to set.
Again it went back into the freezer to be removed about 10 minutes before serving!
