I thought that peach muffins would be a great breakfast treat, and since these delicious muffins use canned peaches, they would also be perfect any time of the year!
Ingredients (12 muffins):
7 tablespoons butter, softened
2/3 cups white sugar
1 teaspoon almond extract
1 teaspoon vanilla extract
4 eggs
2 cups flour
1 teaspoon baking powder
1 can peaches (sugar free); drained well and chopped into small pieces
1/2 cup flour
1/3 cup sugar
1/2 cup butter
1/2 cup slivered almonds
Directions:
In a bowl, beat the butter until it becomes creamy and smooth. Add the sugar. Add the almond extract, vanilla extract, and the eggs. Mix again.
In a medium bowl, whisk the flour and the baking powder. Add the flour mixture to the butter mixture and combine everything with a spoon.
Spoon the batter into a muffin tin which has been greased or lined with muffin liners.
Place the peaches onto the muffin batter.
For the streusel topping, combine the flour and sugar in a bowl. Cut in the butter until you have small crumbs; add almonds . Divide the crumbles evenly onto the 12 muffins.
Bake at 350°F for 15 to 20 minutes or until they’re golden brown.
