Saturday night's dinner was all about the vegetables I had purchased.
Ingredients:
lettuce ~ I combined green leaf and red leaf
1 cucumber, diced
2 tomatoes, diced
1 avocado, sliced
2 ears of corn, grilled and cut from the cob
1 zucchini, grilled and sliced
(I also used grilled chicken ~ not from the market)
Dressing ~ combined in a food processor until smooth
3 small tomatoes
1 tablespoon balsamic vinegar
1 jalapeno pepper, seeds removed
1/3 bunch cilantro
1 slice of onion
1 garlic clove, crushed
1 avocado
