Chicken Capri Parmigiana Recipe

Chicken, ricotta cheese, mozzarella cheese, and tomatoes ~ what could be better.  Add a tossed salad, and your meal is complete!

3 large or 4 medium chicken breast, boneless and skinless
1 cup ricotta cheese
6-8 slices of mozzarella cheese, two per breast
1 cup crushed tomatoes
1/2 teaspoon garlic powder
1/2 teaspoon oregano
2 tablespoons olive oil
salt and pepper to taste

Sprinkle chicken breasts with garlic powder, salt, and pepper.
Brown on both sides in a large skillet.
Remove and cool in a baking dish.  I used aluminum foil sprayed with cooking oil for an easy clean-up.

Blend ricotta with oregano.

Spoon approximately 1/4 cup of seasoned ricotta and 1/4 cup of crushed tomatoes in the center of each breast.

Top each breast with 2 slices mozzarella cheese.  Bake at 350 degrees for 30 minutes.

Garnish with a light sprinkle of oregano, and enjoy! Pin It
