Light and Airy Popovers

A double dose of recipes this week ~ yesterday homemade ricotta cheese ~ today popovers!

Just four ingredients and you will have a great side for soup or a tasty breakfast treat with butter and jam.

2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt
Preheat oven to 450 degrees.  Grease and flour 6 popover cups (or custard cups).
In a medium bowl beat eggs slightly with a fork.  Add flour, milk, and salt.  Mix just until smooth.
Fill cups 1/2 full.

Bake at 450 degrees for 20 minutes.  Decrease oven temperature to 350 degrees, and bake for an additional 20 minutes.  Do not open the oven door! 
Immediately remove from cups and serve hot.
