New York Crumb Cake

Crumb cake has to be one of my favorites for breakfast!  At the bakery you often have to purchase it by the slice, and it can be expensive.  I have a recipe with lots of crumbs that tastes very similar to the bakery version.


Preheat oven to 340 degrees.
In a medium bowl, sift together 1 1/2 cups flour, 1/2 cup sugar, 2 1/2 teaspoons baking powder, and 1/2 teaspoon salt.
In a measuring cup, whisk together 1/2 cups milk, 1 egg, 2 tablespoons canola oil, and 2 teaspoons vanilla.  Add to dry ingredients, and mix well.
Spread the batter evenly into a greased spring form pan.


Melt 1 cup (2 sticks of butter).
In a medium bowl combine 2 1/2 cups of flour, 1 cup packed brown sugar, and 2 teaspoons cinnamon.



Pour the melted butter over the flour mixture, and toss until large crumbs form. 
Sprinkle over the cake batter.


Bake for 15 minutes.  Rotate pan, and bake for another 10 minutes or until a cake tester comes out clean.
Cool for 10 minutes, and remove the sides of the pan.
When thoroughly cooled, sprinkle with confectioners' sugar.
