Over-the-Top Chocolate Cookies

I have mentioned before that my children are continually reminding me that "less is more"!  Maybe they are right about some things, but definitely not with cookies!

A few years ago I made Momofuku Compost Cookies and had each of them try to figure out the ingredients which included crushed pretzels, crusted potato chips, oatmeal, Raisenettes, chocolate chips, butterscotch chips, and coffee grounds.  Actually the cookies were quite good!

This year I went for all chocolate (what's not to love)!

The Over the Top Chocolate Cookie


Directions:
Preheat oven to 350 degrees.
Beat together 1 1/4 cups of softened butter, 1 cup sugar, and 2/3 cups of light brown sugar until light and fluffy.
Add 2 large eggs, 1 teaspoon vanilla and 1 teaspoon coconut extract.

Combine 2 cups flour, 2/3 cups unsweetened cocoa, 1 teaspoon baking soda, and 1/4 teaspoon salt. 



Gradually add to the butter mixture.  It looks delicious now, but we are hardly finished yet!


Stir in 1 cup semi-sweet chocolate chips ... still going....


Stir in 2 cups (15) chopped Oreo cookies ...... a little chocolate crunch....


And finally add 4 (1.75 oz.) Coconut Mounds bars, chilled and chopped ...


Chill dough for about 1 hour ~ don't miss this step or your cookies will be flat!
It really is hard to resist eating the batter (:


Drop by 1/4 cupfuls onto baking sheets lined with parchment paper or a Silpat.


Bake for 10 - 12 minutes.  Allow to cool on baking sheet for 10 minutes, and transfer to wire rack.
