Raspberry Blueberry Crumble

Saturday morning ~ another trip to the Farmers' Market!  The savory smell of sweet sausage on the grill, the sounds of a banjo playing, and the beautiful display of  fresh vegetable and fruits ~ what's not to enjoy?
My past Farmers' Market posts here and here have included vegetables. This week I decided to go for something sweet ~ A Crumble with Fresh Raspberries and Blueberries!



Directions:
Preheat oven to 375 degrees.  Lightly grease a 9" pie plate.
Gently place the fruit into a medium bowl.


Add 1/2 cup sugar, 1 tablespoon flour, 1/2 cup orange juice, and 1 teaspoon vanilla.  Carefully mix with the fruit.  Spoon into pie plate.


In a bowl combine 1 cup flour, 1/2 sugar, 1/2 cup brown sugar.  Cut in 6 tablespoon cold unsalted butter until crumbs are formed.


Add 1/2 cup oatmeal and 1 teaspoon cinnamon.  Mix thoroughly.


Evenly distribute the topping over the fruit. 


Bake for 30 minutes or until the topping is golden brown and the fruit is bubbling.

Serve warm with a scoop of your favorite ice cream!

  2. Yum! We made a mixed berry crisp on Sunday. Raspberries, strawberries and peaches. Screams summer!
