I love Rosemary ~ can you tell? I love its subtle taste, and I especially love the way it makes the kitchen smell when it is cooking.
Lemon Rosemary Chicken is a family favorite ~ easy and quick cooking!
Ingredients:
1 teaspoon crushed rosemary
1/2 teaspoon thyme
1/2 teaspoon Montreal steak seasoning (I use this in almost everything!)
1/2 teaspoon sea salt
1 cup bread crumbs or Panko
2 pieces of boneless chicken breast butterflied
1 lemon ~ use the zest in the breading and the juice in the sauce
Box of chicken broth
1/2 cups dry orzo
olive oil
Directions:
Heat a frying pan with 2 tablespoons of olive oil
Dip chicken into the mixture of rosemary, thyme, steak seasoning, salt, bread crumbs, and lemon zest.
When the oil is hot, add the chicken browning well on both sides.
Meanwhile, add about 1 - 11/2 cups of broth to a sauce pan. When it boils, add the orzo.
When the chicken has browned, add approximately 1/2 cup of broth and lemon juice. Cover pan and let simmer about 10-15 minutes ~ appoximately the same amount of time the orzo needs to cook.
Plate the chicken on top of the orzo, and add some of the lemon sauce from the pan. Garnish with a sprig of rosemary.
