Spinach Tortellini Soup

This fast and easy soup has been one of my all time go-to recipes (and it was Kendra's favorite when she was living at home)!  I served it with orange bread for a tasty meal on a fall evening.


Ingredients:
1 garlic clove; finely chopped
2 boxes of beef broth
1 can stewed tomatoes
1 box frozen chopped spinach (fresh would also be good)
19 ounce bag cheese tortellini
grated cheese (optional)

Directions:
Put about 2 tablespoons olive oil into a large stock pot.  Add garlic and cook until just lightly browned.
Add broth, tomatoes, spinach.  Cook until the spinach has thawed. 
Add the tortellini and cook according to the package directions.  (Mine took about 3 minutes.)
Ladle into soup bowls and add grated cheese.
