Coconut Pizzelles


Growing up with an Italian grandmother, I remember that pizzelles were a staple at Christmas (as well as birthdays, showers, and any other happy event)!
I have always loved the anise flavor, but when I tasted a coconut pizzelle, I knew I would have to give it a try.  It soon became a family favorite!


Ingredients:
6 eggs
2 sticks butter, melted
1 1/2 cups sugar
1 teaspoon vanilla extract
1 teaspoon coconut extract
3 1/2 cups flour
1 cup shredded coconut



Directions:
Melt butter, and let slightly cool
Beat eggs on medium speed of mixer until lemon colored and thick.



Add butter; mix thoroughly.  Add sugar, and combine.
Add vanilla and coconut extracts.
Reduce mixer speed to low, and add the flour.  Combine.
Stir in the coconut.  The mixture will be a little stiff.



Use the manufacturer's directions for heating your pizzelle iron.  When it is heated, drop batter by heaping teaspoons onto iron, close, and cook.  Cooking time may vary depending on the iron; mine took approximately 30 seconds.



Remove from iron, cool, and enjoy!
