Chicken and Wild Rice Soup

It was a little chilly here on Saturday, so a warm bowl of soup in front of the fireplace was just perfect.





Ingredients:
2-3 carrots, chopped
2 stalks celery, chopped
medium onion, chopped
2 garlic cloves, finely chopped
2 boxes of chicken broth
1 box Uncle Ben's Fast-Cooking Wild Rice
1/4 teaspoon thyme
2 tablespoons olive oil
rotisserie chicken (I just used a breast.)

Directions:
Heat oil in a large sauce pot over medium heat.
Add your chopped vegetables; cook slowly for about 5 minutes.  Don't let the garlic burn.



Add the rice, seasoning from the Uncle Ben box.  Instead of adding
1 3/4 cups of water, use 1 3/4 cups of chicken broth.



Bring to boil, simmer for 5 minutes, remove from heat, and allow to sit for 5 minutes.


Chopped your rotisserie chicken into bite-size pieces.




Add the remainder of the chicken broth.  Bring to a boil, and allow to simmer for about an hour or until the vegetables are tender.

Add the chicken, and cook for an addition 2-3 minutes ~ just to warm the pieces.
