Slow Cooker Mushroom Barley Chicken

I do love barley, and I do love slow cookers ~ so this recipe is the best of both worlds for me.

1 tablespoon olive oil
2 boneless and skinless chicken breast, cut into bite size pieces
2 cups sliced mushrooms
1 cup medium pearl barley
2 carrots, chopped
1 medium onion, chopped
2 ribs celery, chopped
1 (14 ounce) can chicken broth
1 teaspoon poultry seasoning
salt/pepper to taste
1 bay leaf

Brown chicken pieces in hot olive oil.  Drain off fat.
Place all remaining ingredients into the slow cooker.  Add chicken, and stir.  Cover.  Cook on low for 6-8 hours or high for 3-4 hours.

So delicious and very filling.
