Slow Roasted Pork

My cousin Marge is an incredible hostess.  An invitation to her home means that you are in for a treat ~ lots of funny stories, lots of laughs, and lots of great food. 
She shared this recipe for an oven cooked pork roast with me.  I have used the recipe many times and have never been disappointed with the results.




Directions:
Preheat oven to 325 degrees.
Place a pork roast on 2 sheet of heavy duty aluminum foil.  



Sprinkle with your favorite dry rub.
Here is mine (thanks to Paula Deen):
3 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
3 tablespoons coarse sea salt


Wrap the roast tightly in the foil ~ the meat will cook in its juices, and foil also makes for an easy clean-up (:



Bake for 3 hours.

Remove from oven and very slowly unwrap the foil ~ Be careful as  steam has built!

Cover with your favorite homemade or bottled barbecue sauce.


Rewrap the foil.  Allow to cook an additional hour.

The roast will be very tender.  We enjoy ours with cole slaw, baked beans, and corn bread.  It would also make a delicious pull pork sandwich!
