Strawberry Spinach Orzo Salad

A trip to the Farmers' Market + beautiful summer produce = the makings of a delicious salad!

I love just walking around the market ~ the smells, the music, and the fresh colors! And Saturday was no exception! 

My favorites this week:  baby spinach and big red strawberries!




My strawberry spinach orzo salad~



Directions (serving for 4):
Boil 1/2 box (1/2 pound)orzo according to package directions (8 - 10 minutes).
Drain and let cool on a baking sheet covered with parchment paper.
Add 1 1/2 cups chopped baby spinach, 5 leaves of chopped fresh basil, 6 chopped strawberries, 1/3 cup feta cheese, 1/4 cup glazed walnuts (or chopped almonds or pine nuts).  Mix with approximately 1/4 cup white balsamic vinegar, 1/4 cup olive oil, salt and pepper.
Optional ingredients:  kidney beans and red onions
Chill until ready to use.
