Delicious Beets

I love cookbooks written by local residents, and in one I found a foolproof way to roast beets.

All you need to do:
Wash and cut off the tops and bottom stems.

Place each beet separately on a sheet of aluminum foil and twist the ends.

Bake at 400 degrees for 45 minutes.
Unwrap and cool slightly.  Hold under cold running water and the skins will come off easily.
Add just a touch of olive oil.  Salt and pepper to taste and you will have a delicious and nutritious side dish.
