Arugula , Beef, and Pasta

My husband loves a Bolognese sauce, but I wanted to try something a little more healthy.  Still using ground beef, I added arugula and whole wheat spaghetti ~ and we both loved the results!


Ingredients
2-3 cups baby arugula
1 pound ground beef ~ I used a lean organic
1 medium onion, chopped
2 cloves garlic, minced
1 box spaghetti
sea salt/pepper to taste
grated Italian cheese


Directions
Saute the onion and garlic over medium high heat.  Add the ground beef, and using a wooden spoon, crumble the beef.  Cook until the beef is browned.  Add salt and pepper.


While the beef is browning, cook the pasta.
Layer the arugula in a large bowl.  Add the hot beef mixture and the cooked pasta. 
Allow to set for a few minutes or until the arugula is slightly wilted.



Mix, and serve with grated cheese.
