Fresh Tomato Basil Sauce

The tomatoes are red and ripe; the basil is in full bloom.  Put them together with a few staples, and you have a delicious pasta sauce.


Serves: 2
Ingredients:
  Fresh tomatoes diced (Mine were large, so I used 3.)
  5-6 leaves fresh basil
  2 cloves chopped garlic
  salt/pepper to taste
  olive oil
  grated or shredded cheese (optional)
  1/2 pasta - I used rigatoni (a favorite of mine second only to gnocchi)



Directions:
Heat a large sauce pan of water for the pasta.
Heat a frying pan; add about 2 tablespoons of olive oil.
Cook garlic only until lightly brown.
Add tomatoes and basil.
Cook only until warm.



Water boiling ~ ready for pasta! Cook according to directions.


The water was really boiling.
 Plate the pasta and sauce.  Add cheese and a drizzle of olive  oil.  Garnish with a sprig of basil.

And as my Italian grandmother Jennie would say:  "Mangia"!
