Cinnamon Sweet Potato Biscuits

Although it is officially spring, and we have been having temperatures in the 70's, Saturday was damp and a little chilly.  I definitely am not complaining ~ one last chance to watch an old movie with a bowl of warm soup in front of a roaring fire!

Sweet Potato Biscuits made the perfect accompaniment!


Ingredients:
1 large sweet potato, cooked
1 1/4 cups flour
1 tablespoon sugar
1 tablespoon brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
4 teaspoons baking powder
1/2 teaspoon sea salt
1/2 stick butter, softened
3 tablespoons milk

Directions:
  Bring a saucepan of water to a boil. Peel and cut the sweet potato into chunks


Add sweet potato and allow to simmer for about 15 minutes or until soft.  Drain.  Mash with butter.


In a separate bowl, whisk together the flour, sugar, brown sugar, cinnamon, nutmeg, baking powder, and salt.



Add to the sweet potatoes.  Mix; add milk.  Stir until you have a soft dough.
Turn dough out onto a floured surface and knead about 5 times.
Flatten dough with a rolling pin until you have about a 1 inch thickness.
Use a 3 inch biscuit cutter or a glass to cut out the circles.


Place on a baking sheet lined with parchment paper.  Brush the tops with melted butter.



Bake for 20 minutes or until golden brown.  And enjoy!
