Pinterest Challenge - Caramel deLites (Samoa) Brownies

Once I saw this recipe on Pinterest, I knew I would definitely be giving it a try. Since we are traveling to Kendra's this weekend, and her husband loves Girl Scout cookies, I knew the perfect time was now!
I wasn't disappointed with the results!


Ingredients:
1 box brownie mix (I used dark chocolate.)
3 1/2 cups shredded coconut, toasted
(2) 14 oz. packages of caramels
1/2 teaspoon salt
4 tablespoons milk
3 oz. semi-sweet chocolate

Directions:
Prepare brownies according to the directions on the box, cool.
Preheat oven to 400 degrees, and place coconut on baking sheet (spreading thinly).  Bake for 2 - 3 minutes.  Stir, and bake for an additional 2 - 3 minutes until toasted.  Be careful ~ it will burn quickly.

In a large microwaveable bowl, add unwrapped caramels, salt, and milk.  Cook for 3-5 minutes, stirring every minute until the caramels are melted and smooth.

Add coconut to the caramels.  Spread over the cooled brownies.  Allow to sit for about an hour. 

Melt chocolate in the microwave (stirring every 30 seconds) until smooth.  Drizzle over the bars.  Let chocolate set.

Serve and enjoy!
