Pork Chops with Blueberry Sauce

I guess I am just trying to prolong summer as much as possible with a recipe that uses blueberries!  But pork chops can be so boring!  I thought that adding the blueberry sauce that I would normally top on pancakes might just be the perk up they needed.  A little sweet and salty ~ a perfect combination!





Ingredients:
4 bone in pork chops
1/2 teaspoon sea salt (I used rosemary sea salt for extra flavor.)
1/2 teaspoon pepper
1 tablespoon + 1 teaspoon olive oil
1 pint fresh blueberries (You could also use frozen.)
1 small onion, finely chopped
zest and juice from lemon
1/4 cup water

Directions:
Heat oven to 400 degrees.
Heat oil in a oven safe fry pan. 
Salt and pepper the chops and brown on both sides.
Place pan into the oven, and allow chops to bake for 30 minutes or until thoroughly cooked.

While the chops are baking, prepare the Sauce
In a small saucepan, saute the onion in a teaspoon olive oil until soft.  Add 1/4 cup water and allow to boil for 2 minutes.  Add the blueberries.  When the skins burst, add the lemon zest and juice.  Slowly simmer until the sauce is  thick. 

Remove the chops from the oven and serve with the blueberry sauce.
