I am always looking for a perfect chocolate chip cookie, and I love to experiment with new recipes.
Chocolate chunks, peanut butter, and peanuts ~ what's not to love?
My family seems to prefer soft cookies. This one has more of a crunch, but the flavor is perfect.
Recipe
Ingredients:
2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon cinnamon
1 stick unsalted butter, softened
1/2 cup peanut butter - I used chunky.
3/4 cup brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla
11 oz (1 bag) chocolate chunks
1 cup peanuts, chopped
Directions:
Heat oven to 350 degrees.
Whisk together the flour, salt, baking soda, baking powder, and cinnamon.
Cream butter and peanut butter until smooth.
Add both sugars, and beat until fluffy (about 2 minutes).
Beat in eggs. Add vanilla.
Add flour mixture; beat on low speed only until combined
Stir in chocolate chunks and peanuts.
Drop by 1/4 cupfuls onto baking sheets covered with parchment paper.
Bake for 15 - 18 minutes.
Cool.
Delicious served warm (microwave for 15 seconds) with a glass of milk!
