Cranberry Almond Muffins Topped with Raw Sugar

A delicious muffin with fruit, almonds, and a sugary topping ~ perfect for breakfast or anytime you crave a sweet treat.











Ingredients (for 12 muffins):
1 3/4 cups flour
1 cup sugar
1/2 teaspoon sea salt
1/2 teaspoon baking soda
1/2 cup canola oil
2 eggs, beaten
1 teaspoon almond extract
1/2 cup dried cranberries
1/2 cup slivered almonds + 1/4 cup for topping
2 teaspoons raw sugar (or white sugar)


Directions:
Preheat oven to 400 degrees.
In a large bowl, whisk together the flour, sugar, salt, and baking soda.



In a measuring cup, mix oil, eggs, and almond extract.  Add to dry ingredients.  Stir only until combined.



Add cranberries and slivered almonds.



Spoon into greased muffin cups or line with paper.



Bake for 20 minutes or until done.  Cool and Enjoy!  ♥

Spiced Banana Oatmeal Muffins

There is nothing better than quick bread to make a meal complete.  Gather your ingredients, mix by hand, bake for 20 minutes, and you are ready to serve.  I love to serve muffins with a hot soup main dish.  Yesterday I thought I would add oatmeal and a few spices.
The results were perfect for dinner and for breakfast the next morning!



Ingredients (serves 12):
1 1/2 cups flour (or a combination of white and whole wheat flour)
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon sea salt
1 teaspoon baking powder
1 teaspoon baking soda
2 bananas (3 small bananas)
1 egg
5 1/3 tablespoons melted unsalted butter (1/3 cup)
1 teaspoon vanilla
1 cup dry oatmeal
3/4 cup brown sugar

Directions:
Preheat oven to 350 degrees.
Whisk together flour, spices, salt, baking powder, and baking soda in a medium bowl.


In a large bowl, whisk butter and sugar.  Add egg and vanilla.


Add bananas.  Mix completely.
Stir the egg mixture into the flour mix only until blended.

 
 
Mix in oats.  Spoon batter into paper lined muffin pan.


Bake for 20 minutes or until muffins are golden brown.


Cool, serve, and enjoy!  ♥

Banana Chocolate Chip Muffins with a Streusel Topping

Always a dilemma to figure out what to do with all of those overly ripe bananas!  My normal go-to would be a banana bread.  But today I decided to add a couple of my favorites ~ chocolate chips and cinnamon ~ and make muffins!

The results were better than I could have hoped!


Ingredients (for 12 muffins):
Muffins
1/3 cup unsalted butter, melted
4 small bananas or 3 large bananas, mashed
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1/4 teaspoon salt

Streusel Topping
1/3 cup brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
1 tablespoon cold butter



Directions: 
Preheat oven to 350 degrees
In a large bowl, mix together bananas and melted butter



Stir in sugar, egg, and vanilla.




In a medium bowl, whisk together the flour, baking soda, and salt.  Add to the banana mixture and stir only until combined.  Add chocolate chips.


Spoon into paper lined muffin pan.  
Make streusel topping
 Mix together brown sugar, flour, cinnamon.  Cut in butter until crumbs are formed.
Sprinkle the muffins with the topping.


Bake for 25 minutes or until lightly browned.


Cool and enjoy
