Crustless Spinach Pie

A spinach pie with a few less calories and a great taste!




Directions:
In a small sauce pan, heat 1 tablespoon olive oil.  Add the following, and cook on medium heat until the vegetables are soften ~ about 5 minutes.
1 small onion, chopped
2 garlic cloves, finely chopped
1 small red pepper, chopped



In a bowl, whisk together 1/2 cup flour, 1/2 teaspoon sea salt, 1/2 teaspoon baking powder, 1/4 teaspoon pepper, dash of nutmeg.  Add 1 egg, 1/2 cup milk, and 1/4 cup melted butter.
Squeeze thawed spinach to remove any water, and add to the flour mixture.  Mix thoroughly.


Stir in the softened vegetables. 
Spread the spinach mixture evenly into a 9" greased pie plate.


Top with 1/2 cup shredded mozzarella cheese.



Bake in a preheated 375 degree oven for 30 to 35 minutes or until the top is lightly browned.
