Fun Finds - All Things Pumpkin

I realize that it is not autumn yet, but I am so ready for cooler weather (and even some football).  This weekend I made a pumpkin pound cake, and now I am into all things pumpkin.

Butternut Squash Soup with Sage Croutons

Hurricane Sandy has left and chilly weather has arrived.  For me that means "soup time"!
I was so happy with the results ~ and it just may be my all-time favorite!



Butternut Squash Soup with Sage Croutons
Ingredients:
5 fresh thyme sprigs
5 fresh sage sprigs + 12 fresh sage leaves minced
Olive oil
1 onion, diced
1 carrot, diced
1 stalk celery, diced
2 garlic cloves, finely minced
Package of peeled, seeded, and cubed butternut squash
2 boxes chicken broth
4 slices bread, crust removed and cubed
salt/pepper to taste

Directions:
Make a bundle of the thyme and sage sprigs and tie with kitchen twine
Heat large soup pot with 1 tablespoon olive oil.  Add the carrot, celery, onion, and garlic.  Cook, stirring ocassionally for 5 minutes
Add the squash, chicken broth and the herb bundle.


Bring to a boil, cover, and allow to simmer for appoximately 40 minutes or until the squash is tender.

Meanwhile, in a fry pan heat 3 tablespoons olive oil.  Add the minced sage leaves.  Cook until crispy about 1 minute.  Remove onto a paper towel covered plate.

Add the bread cubes to the same pan and turn ocassionally until browned. Add the reserved sage and stir.


Remove the cubes and sage to a paper lined plate.

When the squash is tender, discard the herb bundle.  Using an immersion blender, puree soup.



Ladle soup into bowls, top with sage croutons.  I served the soup with pumpkin pie muffins ~ such a great fall treat!

Fall Decorating

Once the wreath was finished and hung on my front door, I was inspired to work on the fireplace mantel.
In the center is a print of a fall harvest that I purchased many years ago.  I put pumpkins on candlesticks and  added a row of tiny pumpkins.  The wreath is from Joann's.  The color was a little darker than I wanted, so I hot glued some orange berries for color.  The bunting was my final touch, and now I am ready for the first fire of the season!



 

Kendra bought me a beautiful vintage domed cake plate this weekend.  I added small pumpkins, cinnamon sticks, and some faux apples and pomegranates, and I have a beautiful centerpiece.

Autumn Wreath - Pinterest Challenge Friday

Kendra always makes such pretty wreaths for her front door which she has posted here, here, here, and here.  I thought I should give it a try.  Where to go for inspiration ~ Pinterest ~ of course! 
I actually found several ideas that I wanted to incorporate, especially to use the stash of materials that I had on hand.

It took a little time, but I am so pleased with the results!


My supplies:
14" round straw wreath
burlap
fall colors of felt
steam of artificial berries



What I did:
I cut the burlap into 2 1/2" strips.  It was a messy job, but I found a fantastic tutorial that made the work a lot easier.


I wrapped the straw wreath with the burlap using my hot glue gun to secure each strip.

Then I made my felt flowers following the directions given on this you tube tutorial

Love the way it turned out; it has inspired me to pull out the rest of my fall decorations!
