Hole Lotta Fun ~ Children's Alternative to Corn Hole

Our family enjoys playing corn hole!  The games get intense and exciting, but the little ones often feel left out.  To solve the problem, Kendra created a game just for them.  She designed a board with three rabbits with large holes just waiting for bean bags to be tossed.  I must give Kendra's husband Scott credit for the construction.

Instead of square bags, this game required carrots!

The games was a huge success with my grandchildren showing the same competitive spirit as the adults.

Summer Strawberry Dessert

Saturday mornings means a trip to the local Farmers' Market, and early June means a promise of fresh, juicy strawberries!

I wanted to make a easy dessert ~ but not just strawberry shortcake.  A look through the pantry, and I had an idea.  Store bought biscuits, instant pudding, whipped cream, and strawberries served in a margarita glass would be a combination of simple and fancy.

The biscuits were baked following the directions on the can.
The pudding was prepared and refrigerated.
I then washed, hulled, and quartered the strawberries.

Once I added a little sugar, I mashed the berries lightly.

Right before serving I separated the biscuit in half, and put the first half into my glass.   I topped it with a couple of spoonfuls of pudding and then the strawberries.  I added the second biscuit half and repeated the layers.
A little whipped cream and a whole strawberry, and my dessert was complete ... and completely delicious!

Cute Little Summer Tea Towels

Yes, another post about tea towels ~ so easy and fun to make!

My daughter Lori's wedding shower was quickly approaching ~ food was planned, and of course, Kendra had created many beautiful homemade decorations.  Now we needed a way to say "thank you" to each of our friends and family.  Kendra found an adorable idea on Pinterest, and we were set.
Our basket of appreciation:

The shower was a great success, but what to do with the left-over towels?  Add a free clip art to match the aqua edging, and I have new towels with our family's favorite ... ice cream!

I used this technique for the transfer.

Other tea towel ideas can be found here and here.

Introducing the Shore House

Hi there and happy Monday!  Today's post is one that I have been looking forward to writing for awhile but had been waiting until there was more to show and share.  You might remember me writing about going to the shore in New Jersey before.  Scott and I got married there and my brother and sister and I grew up going to the same shore house my mom spent summers in when she younger.  The house belonged to my great aunt and it was a great place spend lazy summer days, that was until our families started growing and the 1,200 sq. ft. house started to feel a little cramped - to say the least.   So when my aunt passed away in 2013 the house and adjoining lot were left to my mom and due to space limitations and other logistical issues the decision was made to sell the little shore house and build a larger one right next door.

The construction of the new house began at the end of August and is set to be completed in the next month and half.  My brother has been the liaison between the contractor and the rest of the family, no easy task, but he has made sure the house is everything we envisioned - and more.

Before this all started, I didn't realize just how many decisions would need to made, from the smallest (hinge finishes) to the largest (stain color for the hardwood floors throughout).  It has been a fairly easy process though since each decision is made on a "majority rules" basis so no one is left out.  And we all have had different jobs throughout the building process and one of mine has been creating design boards for each room/space so we can all see if the items we are considering using will work before purchasing them.  Over the next few weeks I'll share these along with sources and some interior shots.

We're all looking forward to this summer in a brand new house that we designed together!

We're Back and Smoothie Day!

Oh we are the worst!  Sometimes Summer just gets the best of us and we take off for a few days (weeks) and forget to update you all on our whereabouts.  Summer means travelling to visit our families as much as possible since it works for everyone's schedule and there is soooo much for us to do both here and away.  Anywho, we're back (with a vengeance) and promise to post something every day for the next week...after that who knows: )

After a prolonged vacation I usually go into detox mode - or healthy eating mode to help counteract all the ice cream, pizza, beer and ice cream (it deserves two mentions!) consumed during our time away.  We both have Moms The girls' Noni and Grandma) who love to spoil us with yummy treats everyday and since we don't eat like that at home we go all out when we are with them.

So the Monday we got back I made a trip to Michaels for a dozen mason jars and another trip to Whole Foods for smoothie supplies.  Then, after about two hours of washing, cutting and blending I had 12 jars full of smoothies ready for freezing and about 15 bags of prepared smoothies bags that just need to be dumped into the blender with either the frozen coconut water or coconut yogurt ice cubes I made and done!

Here are a few of the combinations I came up with:

Baby Spinach
Almond Milk
Blueberries
Chia Seeds

Strawberry
Banana
Lime (juice of two)
Coconut Water

Peach (skin off)
Raspberries
Coconut Water
Chia Seeds

Kale
Mango
Banana
Cinnamon

Raspberries
Coconut Water
Blueberries
Mint

YUM!!!!

Farmer's Market Shrimp Pizza

Summertime ~ and I am always ready to grill!  Today it was a shrimp pizza loaded with vegetables from the local Farmer's Market.

I really did not measure any of the ingredients ~ a haphazard pizza that ended up tasting delicious.

Grill shrimp and asparagus (coated with olive oil)

Grill store bought (or hand made) pizza dough just until lightly browned.
Add a topping of pesto (store bought or home made).

Add a layer of sliced tomatoes (I take out the seed).

Sauté kale (or arugula or other greens) in a sauce pan with a little oil until wilted, and sprinkle on top of the tomatoes.

Top with pieces of asparagus and coarsely chopped shrimp, a little salt/pepper, and Italian cheese.

Bake at 425 for about 15 minutes.

Enjoy! ♥
